Apple Bird Cake

INGREDIENTS
6 apples (I used Jonagold apples)
3 eggs
1 1/2 cups white sugar
3/4 cup vegetable oil
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 tablespoon vanilla extract
1/4 cup milk
2 1/4 cup all-purpose flour
DIRECTIONS
- Preheat oven to 325 degrees. Grease and flour a 9X3-inch round cake pan. Core and peel 4 apples and cut into 1-inch wedges and set them aside.
- In a large bowl, whisk together the eggs and sugar until blended. Mix in the baking soda, oil, cinnamon, vanilla and milk. Stir in the flour, just until incorporated. Fold in the apple wedges.
- Pour batter into prepared pan. Bake in the pre-heated oven for about 1 hour, or until a knife inserted into the center of the cake comes out clean. Allow cake to cool slightly and place it on a serving dish.
- Thinly slice 1 apple and put slices along the top edge of the cake in a circle. Sprinkle desired amount of cinnamon on the apples.
- Carve the last apple into an apple bird (see directions on the next page) and place in the center of the cake. Top off with lots of whipped cream.
CARVING AN APPLE BIRD
Step 1:
Slice off about 1/3 from the apple's side for the base, and set aside sliced section to make the head/neck later.
Step 2:
Set the apple on its base. Make a V-shaped wedge with a knife from the top of the apple. Keep making wedges from the top, each a little bigger than the last. Repeat on both sides of the apple.
Step 3:
Overlap the wedges from largest to smallest to form the feathers.
Step 4:
Take the slice from step 1 and make a 1/4-inch slice from the center. Then cut some fruit away from that slice to make the head/neck. Use apple seeds for the eyes. Insert a toothpick into the body and attached the head/neck.
Tah-dah! Apple Bird!
